Ingredients

Method

  1. Heat the oven to 195 C (385 F).

  2. Toss the fennel with 1 tablespoon oil and spread in a baking dish. Roast 8 minutes.

  3. Place orange slices on top and set the seasoned fillets over them.

  4. Drizzle with the remaining oil and sprinkle with crushed seeds.

  5. Bake 12 to 15 minutes until opaque and flaking.

  6. Garnish with fronds and serve.

Tips

Slice fennel thinly so it softens in time. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
