Ingredients

Method

  1. Place a parchment-lined tray in the oven and heat to 210 C (410 F).

  2. Mix the sugar, paprika, garlic powder, mustard powder and salt.

  3. Dry the fillet, brush with oil and press the rub onto the flesh.

  4. Slide the fillet, skin-side down, onto the hot tray.

  5. Bake 14 to 18 minutes until the thickest part is opaque and flaking.

  6. Slide a spatula between flesh and skin to lift the portions off, and serve with lemon.

Tips

Fold the thin tail under to even out thickness. The hot tray gives a roasted texture without a plank. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
