Ingredients

Method

  1. Heat the oven to 200 C (400 F) and line a tray with parchment.

  2. Pat the fillets dry and set them on the tray, leaving space between them.

  3. Stir together the oil, lemon juice, garlic, parsley, dill, salt and pepper.

  4. Spoon the mixture over the fish and lay a lemon slice on each fillet.

  5. Bake for about 12 to 15 minutes, depending on thickness, until the fish is opaque and flakes easily.

  6. Rest for 3 minutes and spoon any tray juices over the top before serving.

Tips

Thicker centre-cut fillets may need a few extra minutes. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
