Ingredients

Method

  1. Heat the oven to 200 C (400 F) and line a tray with parchment.

  2. Blend or chop the basil, almonds, garlic, cheese, oil, zest and salt into a coarse paste.

  3. Dry the fillets and place them on the tray.

  4. Press a layer of the paste onto each fillet.

  5. Bake for 12 to 14 minutes until the fish is opaque and flakes easily.

  6. Serve with a squeeze of lemon and any remaining paste on the side.

Tips

Contains nuts and dairy, so check for allergies. Use a nut-free seed such as sunflower seeds if needed. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
