Ingredients

Method

  1. Heat the oven to 200 C (400 F) and line a tray with parchment.

  2. Stir the harissa, honey, lemon juice, oil, cumin and salt together.

  3. Dry the fish and place skin-side down on the tray.

  4. Spoon the paste evenly over the tops of the fillets.

  5. Bake for 12 to 15 minutes until opaque and flaking.

  6. Scatter with coriander and serve with yoghurt or couscous.

Tips

Brands of harissa vary in heat, so taste a little first. Cool yoghurt on the side tames the spice. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
