Ingredients

Method

  1. Heat the oven to 205 C (400 F) and line a tray with parchment.

  2. Mix the breadcrumbs, cheese, parsley, butter, garlic powder and half the salt.

  3. Dry the fillets, season with the remaining salt and brush the tops with mustard.

  4. Press the crumb mixture firmly onto the mustard.

  5. Bake 12 to 15 minutes until the crust is golden and the fish is opaque and flaking.

  6. Rest for a couple of minutes before serving.

Tips

Contains dairy and gluten unless you swap the crumbs. Place the tray on an upper rack for extra crunch. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
