Ingredients

Method

  1. Heat the oven to 205 C (400 F) and line a tray with parchment.

  2. Whisk the maple syrup, both mustards, vinegar and oil in a small bowl.

  3. Dry the fillets, season with salt and place them on the tray.

  4. Brush half the glaze over the fish and bake for 8 minutes.

  5. Brush on the remaining glaze and bake 4 to 6 minutes more until opaque and flaking.

  6. Scatter with chives and serve with any glaze from the tray.

Tips

If the glaze darkens too quickly, tent the fish loosely with foil. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
