Ingredients

Method

  1. Heat the oven to 200 C (400 F). Tear four large sheets of foil.

  2. Divide the beans and tomatoes among the sheets and top each with a fillet.

  3. Add butter, garlic, thyme, salt and two lemon slices to each.

  4. Fold the foil over twice and seal the ends, leaving air space above the fish.

  5. Set the packets on a tray and bake 16 to 20 minutes.

  6. Open carefully, away from your face, and check the fish is opaque and flakes easily. Reseal and bake a few minutes more if needed.

Tips

Slice beans thin if you like them tender. Open the packet for the last 2 minutes for a little colour. Check the thickest part: the flesh should be opaque and flake easily with a fork, and you should follow your food-safety agency guidance on safe internal temperature.

Storage

Cool promptly, then refrigerate in a sealed container and eat within the period recommended by your local food-safety agency. Reheat gently until steaming hot, or serve cold in salads and sandwiches.
