Thickness

Thickness is the height of a fillet at its thickest point, and it is the best single predictor of how long salmon needs in the oven. A slim piece may be ready in under ten minutes at a hot setting, while a chunky centre-cut can need twenty or more. Look at the fillet from the side when you buy it and choose portions of similar thickness so they finish together.
