Sheet Pan
A sheet pan is a rimmed, flat metal tray used for roasting fish and vegetables together in one layer. It cooks with dry, open heat, which browns the surface, so the usual method is staging: dense vegetables such as potatoes and carrots go in first, often for 15 to 25 minutes, and the salmon joins later. Use a heavy tray, which will not warp, and do not crowd it, because steam prevents browning.
