Parchment Paper

Parchment paper is heat-resistant, non-stick paper used to line trays and wrap food for baking. For salmon it keeps glazes from burning onto the tray, makes cleanup easy and can be folded into a parcel for steaming. Unlike foil it does not react with acidic ingredients such as lemon juice or tomato. It is a lining, not a lid, so it will not trap steam unless the edges are folded tightly.
