Foil Packet

A foil packet is a sealed parcel of aluminium foil holding fish and vegetables, which steam together in the oven. The trapped steam keeps salmon exceptionally moist and lets a few aromatics, such as lemon, herbs and garlic, go a long way. Packets usually need a few extra minutes compared with open baking because the foil slows the heat. Open one carefully, away from your face, since escaping steam is very hot.
